Platonic:
Camellia's family owns a plant store in Diagon Alley that sells common magical plants, carnivorous plants, potions ingredients, and some common potions for Herbology related work (and more). She started teaching at Hogwarts in 1999, but the store passed on from her to her daughter, Dahlia. During the Second Wizarding War, when Hogwarts was taken over by Death Eaters, Camellia was summoned by the Dark Lord to tend to the plants of the green house and ordered her to plant species of plants used in Dark Magic potions. During the Battle of Hogwarts, Camellia was in the green houses when the battle started. She took several of the plants and used them to help defend the students as they retreated to their common rooms. After the war, she helped restore the green houses and took over as the Herbology professor and head of Slytherin.
I'm open to developing backstories with others!

Romantic:
Camellia was married shortly after graduating from Hogwarts. After having two children, her husband, an auror, was killed around the time of the First Wizarding War. She has not remarried since, but has dated from time to time.
It would be nice to have an interest, but I'd love to see it grow organically. I'm also open to Camellia having some romantic interest before coming to Hogwarts (and after)!

Antagonistic:
Dark Wizards are responsible for the death of her husband, and she gladly fought back during the Battle of Hogwarts despite growing plants to help them with potions. Her family had her do it as a means to protect their family and the store. While Camellia has dabbled in Dark Magic over the years, she never aligned with Voldemort nor did she ever do anything more than tend to the greenhouse plants.
Camellia holds a grudge against Dark Wizards and would not befriend them intentionally. She also enjoys lying/pranking students which may cause some issues.
